Upon starting to play though again, I find my extensive time in the Excalibur (with it's auto-adjusting weapons) has entirely ruined my ability to aim inside the pipper, let alone actually hit a target with anything else.
Anyone else shooting like a newbie with Astigmatism out there?

Hey, welcome to our society guy !
I also find it soooo difficult to be back with no auto-aim... It took some missions again to aim as something else but a squinting ungifted total newbie pilot.
After too many guns miss, I sometimes find myself switching to missiles, the only kind of weapons left with an auto-aiming ability.
On the other hand, I like the sparrows, their speed and their very high rate of fire.
I also find it soooo difficult to be back with no auto-aim... It took some missions again to aim as something else but a squinting ungifted total newbie pilot.

Yeah, going right from the endgame back to the beginning is a bit of a rude shock; it took me several missions before I felt like I'd gotten back into the swing of actually having to aim again

i played on very easy and my aim always sucked so i didn't notice
all i have to say is thank the devs for prologue

I think you meant Arrows
I have to agree that after flying Excalibur going back to no auto-aiming was difficult at first but after few encounters my skills were back to normal.

In some of these missions there are so many fighters that I found myself "dumb firing" on targets that I didn't target. I got a lot of kills that way too.
